We shave the Honkare bonito flakes every day using a special machine.
The key to the flavor of Edo Wan is the "dashi" (soup stock). Every morning, we shave the Honkare-bushi (dried bonito flakes) from Nihonbashi's long-established Ninben to 0.01 mm using a special machine, and draw the broth with the flavor of freshly shaved bonito flakes. The melt-in-your-mouth dried bonito flakes are also served as an appetizer.
