Ehime Ishizuchi Tokubetsu Junmai Hiyoroshi
Ishizuchi" is characterized by its rustic, handmade flavor.
It is a dry sake with a very rich and robust acidity, but it has a very pleasant soft touch on the palate from the high-quality brewing water, which has the same origin as "Uchinuki," one of the 100 best waters in Japan, and the lingering and deep flavor can be gradually felt.
This is a sake that the brewery is particularly proud of among the Ishizuchi lineup, as it is made by carefully fermenting the mash in small brewing tanks for a long period of time during the winter brewing stage, when it is planned to be shipped as a cold sake.
Ishizuchi's sake, which has the theme of "Junmai-shu for eating," shows its true value in the autumn season when delicious foods are available.
The soft, warm flavor, which reminds us that sake is made from rice, matches a variety of autumnal flavors.
