Today's introduction,
It's a kamameshi (rice cooked with autumn salmon).
The most delicious season is from September to November, and chum salmon caught during this period are also known as "autumn salmon.
Returning to the river where they were born to spawn, the salmon in season have plenty of nutrients stored in them, making them fatty, thick, and rich in flavor.
We also put a generous amount of salmon roe on top!
