It is said that tempura originally originated in Portugal (Nanban cuisine), but in the early Edo period (1603-1868), the production of oil increased and tempura gradually spread as a "common taste" in Edo (present-day Tokyo). Yatai-meshi, which is also the root of Japanese fast food, developed during that time.

Example] Along with sushi, eel, and soba stalls, tempura was popular at standing tempura stalls, where tempura on a skewer was eaten as a snack.

Edo tempura, which spread in this way, was thinly battered and flavored only to the point of being savory, and was eaten with tempura sauce.

It is also said that tempura became available throughout Japan after the Great Kanto Earthquake of 1923. Artisans who lost their jobs due to the earthquake moved to various parts of Japan, and as a result of exchanges between artisans from the East and West, Kansai-style tempura (satsuma-age) became available in Tokyo, and Edo tempura also spread throughout the country.
