We are pleased to post a sake by Naohiko Noguchi, a leading figure in the ginjo-shu boom and the resurgence of Yamahai brewing.
Ishikawa Prefecture, Japan

Its mature taste reminds us of the arrival of autumn.
The palate is filled with a full-bodied aroma derived from rice, with a pleasant sweetness and acidity, and a slightly bitter aftertaste that is pleasant to the palate.

It goes well with seasonal delicacies, such as fatty autumn swordfish, simmered karei (dried young sardines), and steamed matsutake mushrooms in an earthenware teapot. It also goes well with smoked dishes, spicy dishes, and well-seasoned dishes such as teriyaki.

Chill it in the refrigerator to enhance its sweetness and acidity. It can be served at room temperature or warmed to about 40°C (104°F) for a more synergistic effect with your meal.
