Niigata Prefecture Tsururei Tokubetsu Junmai Hiyoroshi
A limited edition of Tsururei, a famous sake from Shiozawa in snow country with a history of over 300 years in business and a traditional flavor nurtured in the harsh winters of Uonuma!
This popular series pursues the individuality of each type of rice by using different raw materials and brewing methods, and is distributed only by a limited number of distributors in Japan.
This is a hiyaoroshi special junmai sake made with 55% polished Yamada-Nishiki.
Hiyaoroshi" is a typical autumn flavor, which is only available at this time of year, and is expressed with a rich umami taste that brings out the original flavor of the rice, typical of Tsururei.
After being fired only once, this hiyaoroshi is stored and matured quietly in Tsururei's snow room during the summer and then brought out in the fall.
It has a perfect finish with plenty of flavor, with a volume that brings out the flavor of Yamadanishiki, a sense of rounded maturity, a depth of flavor, and a harmony of soft umami and acidity.
The mellow autumnal flavor is different from that of fresh, high-impact sake. Please enjoy it with fatty seasonal fish.
