Today's Recommendation
Oyster Special Junmai Sake, Hyogo Prefecture, Japan
The challenge this time from Ryu-ryoku was,
Sake specially designed for pairing with oysters.
The common name for this sake is "Ibogawa" (ibogawa).
The subsoil water of the Ibo River is used as the brewing water for Ryuriki, and the rice used for this brew, "Shinki," is rice grown in the watershed of the Ibo River, in Mitsu Town, Hyogo Prefecture.
And the title of this sake, "Oyster," comes from Harimanada, a sea flowing from the Ibo River and a thriving oyster production area. Harimanada oysters, grown with the blessings of the river, are characterized by their rich flavor and rich taste.
The result is the "Ryuriki Special Junmai Oyster", which is the result of having rice, sake, and food all having the Ibogawa River in common.
The strong rice flavor that is typical of Ryuriki is
The softly spread sweetness mellows out the flavor of the oysters, and the acidity characteristic of the sake rice, Jinriki, refreshes the aftertaste.
It is a perfect accompaniment to oysters.
