This sake is brewed with malic acid yeast.
We used Association 77, a highly malic acid-producing, multi-acid yeast!
Ringo-chan], made with Association No. 77, which produces a highly aromatic, multi-acid sake characterized by malic acid as its main ingredient, is a low-alcohol sake with an alcohol content of 12%.
But it is not watered down to a lower alcohol content.
It's junmai sake with an alcohol content of 12%. It does not taste thin at all, but has a firm, juicy umami flavor.
