・When I try to eat a dish made with the five basic tastes in mind, I sometimes feel that it lacks richness.
It seems that there is no clear definition for "koku". "Delicious" doesn't mean "rich".
However, in general, richness and depth of flavor are often expressed as richness.
The origin of this koku is considered to be China, and it is written as [Koku] in kanji. It is the same as the kanji character for "terrible (terrible)", and it does not seem to be suitable for expressing the deliciousness of food, but in China, this word expresses the ripeness of grains, and it is ripe and rich. It may be a feeling that applies when you think that it has become a taste.
